Low Carb Bread

You know what happens when you have a baby? The last thing in the world you feel like doing is blogging. But I feel like I'm finally starting to get back in the swing of things. And it only took three months! I've started running again, trying to get back my pre-baby body. And, although I haven't been writing about it, I have been posting pictures of my low-carb, keto friendly meals on instagram. It's so much faster.


One of the most recent low carb substitutes I tried out was bread. I used THIS recipe to create a loaf of bread that has only one carb per slice. Yes, you read that right. ONE CARB! Without further ado, here it is:

Ingredients

12 oz cream cheese
1/4 cup butter
4 eggs
1/4 cup heavy cream
1/4 cup olive oil
1 2/3 cup unflavored zero carb protein powder
1/2 tsp salt
1/3 tsp baking soda
1 tsp xanthan gum
2 1/2 tsps. baking powder
1/4 tsp cream of tartar

Preheat oven to 325 degrees. Grease a bread pan. Blend together softened cream cheese and butter. Add eggs, heavy cream, and olive oil and mix. Blend all dry ingredients in a separate bowl. Add dry ingredients to wet ingredients and mix gently with a spoon. Pour into greased pan and bake for 45 minutes.

A couple of notes: The original recipe called for an optional liquid sweetener. I did not use this, but I think I'll try it next time. Also, there were two specific proteins that were recommended. I did not use either, and think that may be why my bread did not rise much. I used a protein I found at my local Kroger grocery store, which was much more convenient than having to order one when I wasn't even sure how the recipe would turn out.

Overall, a success! I will definitely make this again, and my little keto kid loved it! Although it's a little plain to me, so far she has enjoyed dipping it in salsa, making a sunflower butter sandwich, and turning it into a low carb French toast. No complaints here!
