Low-Carb Cinnamon Cookie Bites


No matter what I try, my child will not eat my attempts at homemade desserts. Doesn't matter if I think it's the most delicious treat ever invented, it's like she knows I made it myself and she refuses to eat it. Does she have a sixth sense about these things?! For the love of God, what child doesn't want to eat a fat-filled whipped cream and powdered jello mixture?! Ok, that may not be a great example, but most of the treats I make for her are downright tasty. To me, anyways.

Since Christmas is only five days away (seriously?! Five days?! I haven't wrapped a single gift!), I have been scouring every low carb and/or keto recipe site that exists, looking for a cookie recipe she would actually enjoy. I mean, what's Christmas without the obligatory cookie day? And we have to make cookies for Santa! As luck would have it, I found a pretty simple one here that I thought she'd like. I finally made it to the store today for the ingredients I didn't already have and, BEHOLD, the perfect cinnamon cookie morsel that practically melts in your mouth. And for barely any carbs! And she loves it! Did I mention she loves it??!!


Ingredients
5 oz almond flour
1.5 oz vanilla whey protein
4 oz room temperature butter
2.5 oz erthritol
2 tsp cinnamon

Mix all ingredients by hand in a large bowl. Shape into little balls of dough and place onto lined cookie sheet. Bake in oven preheated to 350 for about 10 minutes. Let cool completely before touching (this is important because they're still pretty crumbly before they cool).

I made 28 cookie drops from this recipe, which means each has approximately 6.5g of fat and .5 net carbs. Your macros may be different depending on what type of protein powder you use.
